Lanzhou (兰州) is an industrial city of about three million people on the shores of the Yellow River in the west of China. It is the capital of Gansu and was a stop on the old Silk Road.

Lanzhou is famous for its beef noodle soup (Lan2 Zhou1 Niu2 Rou4 La1 Mian4). The noodles are always hand pulled, and the bowl is usually served hot and spicy with as much beef as you care to pay for. If you're in Lanzhou, be sure to look up a chain called Ma1 Zi1 Lu4.
